Peel apples, quarter, remove cores and cut into thick wedges. Melt butter in large frying pan over low heat until foaming. Add almonds, choice of sugar and spice. Stir until almonds brown slightly and sugar caramelises. (It will separate from the butter.) Add orange rind and juice, stir until boiling, add aples cover, simmer 10 minutes or until softened. Serve over toasted waffles, pancakes or flapjacks. Accompany with any fruit yoghurt or vanilla ice cream. Serves 4
