 Bocconcini & Roast Tomato Salad

 

Bocconcini & Roast Tomato Salad

8 Roma Tomatoes, cut in half lengthwise
100g baby rocket or spinach, well rinsed
6 small bocconcini, cut in half
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
Handful roughly sliced basil leaves
60g parmesan cheese, shaved
Cracked black pepper

  • Heat griller and roast tomatoes cut side down until skins blister and char
  • Set aside until cool enough to peel the skins
  • Arrange choice of leaves on serving plates. Top with tomatoes and bocconcini cheese
  • Drizzle over oil then vinegar. Scatter over basil and parmesan. Season with a little cracked pepper

Serves 4

Variation
Add 6 well drained roasted artichoke hearts from the deli. Cut in half and add to salad.
