8 pork "Chinese style" Spare ribs
4 whole small chicken legs or Marylands
Marinade
Mix together in a bowl:
1¼ cups natural yoghurt
50 g packet (½ cup) Almond Meal
2-3 teaspoons honey
2 teaspoons curry powder or ground cumin
2 teaspoons any chilli paste (Sambal Oeleck) or ½ teaspoon chilli
flakes to taste
- Pre-heat oven to 200ºC
- Cut chicken through the joint into thighs and drumsticks. Arrange
in shallow dish, add pork. Pour over marinade, turn to coat, cover,
chill several hours or until required
- Place pork and chicken on well oiled flat oven tray or on a rack over
baking dish of hot water. Spoon over any excess marinade
- Bake 25-30 minutes or until tender and coating becomes golden brown
- Accompany with tossed spinach salad and lime or lemon halves

Handy Tip
As a choice omit pork spare ribs, marinate 8 chicken drumsticks.
