 Spicy Chickpea Tomatoes

 

Spicy Chickpea Tomatoes

  • 500g any short pasta or couscous, cooked as packet directs
  • 1 tablespoon olive oil
  • 1 clove garlic, chopped
  • 1-2 teaspoons cumin
  • 2 400g cans or similar weight chopped tomatoes
  • 300g can chickpeas
  • 8 dates sliced
  • Salt and pepper

Heat oil in a large frying pan, fry garlic and cumin over low heat for 1 minute.

Add tomatoes, boil for 5 minutes.

Add chickpeas with liquid and dates.

Heat through, season with salt and pepper.

Serve over pasta or couscous.

Serve with prepared Greek style eggplant dip or natural yoghurt.
