|
Heat oil in a large frying pan, fry garlic and cumin over low heat for 1 minute. Add tomatoes, boil for 5 minutes. Add chickpeas with liquid and dates. Heat through, season with salt and pepper. Serve over pasta or couscous. Serve with prepared Greek style eggplant dip or natural yoghurt. Serves 4
