"A big lift of whitefish out of Lake Superior weighs about 2,000 pounds for
Dennis VanLandschoot, the president of VanLandschoot & Sons Fish Market. But
for the fifth-generation family business in Michigan’s Upper Peninsula, only
about half of that will generate any income. After removing the scales, the
head, the stomach and the bones, all that is left is the fillet, which makes up
about half a fish’s weight.
“So we have the thousand pounds of waste that has no income to us,”
VanLandschoot said. “You know, you have the business side of it. But you have
to, and this might sound funny, but: What do we do to honor the fish?”
At the moment VanLandschoot sends the rest of his fish to be turned into
fertilizer, and while he takes comfort in knowing that spare parts of his fish
are used, it results in no income. But another option has emerged, aiming to
create a sustainable supply chain for these neglected Great Lakes fish parts.
Organized by the intergovernmental organization Great Lakes & St. Lawrence
Governors and Premiers (GSGP), the 100% Great Lakes Fish Initiative seeks to
utilize every part of the fish pulled from the five water bodies, creating a
more sustainable industry and helping develop the region’s rural economies."
